Welcome to Plattsburgh’s Winter Farmers Market online. We have a great indoor market at the City Recreation Center on Thursdays (Tuesday of Thanksgiving Week) 3 to 6 p.m. To make it convenient for those stopping after work, those having someone pick their groceries up, buying groups, and those living south of Plattsburgh, we offer online ordering with the option of picking your order up at the farmers market or on Friday at Rehoboth Homestead in Peru.
We are a “producer only” market, meaning you buy from the family that grew or made the product, and can ask them about their production practices. Many of our vendors use organic production practices, and even the baked goods are free of chemical preservatives.

Eggs - DuckGrower: Rehoboth Homestead

Half-dozen duck eggs from our Golden Cascades and Welsh Harlequin ducks. These are extra-large. The muscovies haven't started laying yet (that I know of) but their's will be very jumbo when we get them. Hard boiled duck eggs peel easily, even when fresh (fresh chicken eggs are hard to peel). They are shades of pale blue, and usually shiny. The whites are higher in protein and more firm than chicken eggs, so they make great omelets that are easy to flip, but use lower heat or they can get rubbery. Otherwise, they taste the same as chicken eggs. The photo shows a goose egg on the left, a large chicken egg in the middle, and a duck egg on the right.
Duck eggs are larger so have proportionately more of most nutrients, but have MUCH more niacin, B12, and vitamin A than chicken eggs.

Geese lay in the spring only. The eggs are a gorgeous blue, and big (averaging .4 lbs). They make wonderful angel food cake, omelets and fritatas (the whites are firm so hold together), and REALLY impressive deviled eggs. Hard boiled duck and goose eggs peel easily, even when fresh. I had an "over easy" goose egg the other day that was scrumptious - lots of yolk. They are great for home made noodles. They make a really satisfying soft boiled egg (drop into boiling water, about 10 minutes).
Many folks blow the eggs out so they can decorate the shells, but if you are willing to sacrifice the shell and crack the egg open, I expect you will be impressed by the size of the yolk!

Though it costs more to produce eggs in the winter, we have fewer customers. So, for the winter I am giving you the same discount I give folks all year who pick up at the house.
Wonderful fresh eggs from hens who get to roam around outside if they want, and have warmish shelter if they prefer. There are a surprising number of insects active in the winter that they find to eat, and they get the garden greens that are too damaged to sell.
Extra large eggs weigh .14 to .15/pound. Large eggs weigh .12 to .13/pound.
